Hemp - Sauerkraut Pancakes Recipe

A typical Czech dish full of vitamin C, thanks to sauerkraut. Great as a healthy snack during the day or as a main dish.

Ingredients
- 4 tbsp hemp flour
 - 1 handful hulled hemp seeds
 - 500 g sauerkraut (drained to 250 g)
 - 250 g lard
 - 350 g wheat flour (or gluten-free flour and 1 egg)
 - 1-2 tbsp salt
 
Preparation
- 
Prepare Sauerkraut:
- Drain and cut the sauerkraut into small pieces.
 
 - 
Make the Dough:
- Mix all the ingredients (except the hemp seeds) into the flour to make a medium-stiff dough.
 - Roll out the dough evenly and place it on a metal baking sheet greased with hemp oil.
 
 - 
Add Hemp Seeds:
- Sprinkle the dough with hulled hemp seeds and press them into the dough slightly with a rolling pin.
 
 - 
Cut and Bake:
- Cut the dough into small shapes.
 - Bake at 180°C for 30-40 minutes until golden brown.
 - Let cool before serving.
